People often ask me: "Alan, what is Specialty Coffee culture to you?" For me, it has never been just a simple drink or a quick morning habit. It is a culture. It is the result of a deep dedication to studying and understanding the endless world of coffee origins, which guides me in every choice I make for my shop.

I’ve seen plenty of films and documentaries about coffee, but one in particular really stood out to me: the series "Would You Like a Cup of Coffee?", directed by No Jung-wook. Watching it was like looking into a mirror. It reminded me that coffee is a lifelong journey—a constant search for that perfect cup where I am always learning something new about every bean.

The Passion for Discovery


Every time I brew, I feel a deep sense of connection. It’s the thrill of opening a new bag, smelling the complex notes of a fresh roast, and knowing the hard work of the farmer behind those beans.

For me, this world is a way of life. It’s about sharing that same excitement with you, making sure you have the tools and the knowledge to extract that same magic in your own kitchen. I don't just want to sell you a product; I want you to feel the same spark I feel every morning.


Understanding the Specialty Coffee Culture


A core lesson from Kang Go-bi’s journey stayed with me: the duty to bring out the best in every single bean. My work doesn't stop at the bag; it begins with understanding. I spend time studying the processing methods—whether it’s a washed process from Kenya, Guatemala, or Peru, or a vibrant natural Ethiopia—because I want to know the "why" behind every flavor.

I dive into the details of altitude and soil because I want to learn the story of that coffee so I can share it with you. I study these details first so that I can guide you on how to find those perfect notes in your own cup at home. Every book I read and every documentary I watch is about one thing: making sure that when you brew the coffees I select, you experience the same perfection I strive for.

Hitting exactly 18.5g in the portafilter isn’t about chasing a "magic number." It’s about the consistency and focus that this craft demands. It’s a moment of technical precision—a necessary step to ensure that every cup I brew is as honest and high-quality as the last.

Precision isn't just about technicality; it’s about respect for the craft. Every time I dial in a recipe, I’m looking for that perfect result—the same dedication I saw on screen, and the same quality I want you to experience with every bag of coffee from my shop.

Watching that series reminded me that coffee is a universal language that connects us all, far beyond the morning cup. It’s a world of stories, dedication, and shared moments.
