Forget everything you know about Peruvian coffee. Usually, when we think of Peru, we think of chocolate, nuts, and a heavy body. But the Peru Cedarwood Specialty Coffee Valencia is rewriting the rules at Finca Cedruyoc, located 1,850 meters high in the heart of Calca.

This isn't just coffee; it’s a visionary experiment by Juan José Huillca. Through a meticulous 84-hour double fermentation, he has unlocked a vibrant, tropical soul in these 100% Bourbon beans. Precision in the field leads to excellence in the cup. This lot scored an impressive 85.50 SCA, but the numbers are only half the story.

A close look at these dense, healthy Bourbon beans, stable and ready for the cup.

The beans are dense, healthy, and were roasted with an omni-light profile on December 22nd. This means we are now in the Peak Flavor Window: the coffee has had time to stabilize, allowing the complex sugars from that 84-hour fermentation to truly "pop" in your cup.

A Sensorial Journey: From Papaya to Red Apple


When you sip the Peru Cedarwood Estate, it feels more like a tropical infusion than a traditional espresso.

The experience starts with a bright, juicy entrance of Papaya—sweet and exotic. As the cup cools slightly, it evolves into the crisp, clean sweetness of Red Apple. The body is elegant and tea-like, perfect for those who seek clarity and complexity over simple bitterness.

The beauty of specialty coffee is that there are no "universal laws." These are the parameters I am currently using—consider them a solid baseline for your own experiments.


Option 1: Espresso on the AEG 8000 Series

Taming a light, double-fermented roast requires a machine with thermal stability. My AEG Series 8000 is the perfect partner for this task. I found the "sweet spot" by setting the integrated grinder to 8, using a High temperature setting to fully extract the sugars.

Precision brewing: 18.5g in, targeting 36.9g in the cup in 26 seconds at 9 bars.

Option 2: The Chemex Ritual

If you prefer a slower ritual, this coffee shines in a Chemex, highlighting its floral elegance.

  • Ratio: 1:15 (20g coffee to 300g water)

  • Grind: Coarse

  • Temp: 93°C

  • Time: ~3:30 - 3:45 min
