A clean and bright specialty espresso grown in the volcanic heart of Acatenango


If you think you know Guatemalan coffee, think again. Forget the usual heavy, chocolatey cup you’re used to. This Guatemala Los Volcanoes is here to break the rules. It’s an explosion of freshness and clarity that honestly caught me by surprise—and it’s exactly why it had to be part of the Uni.coffee selection.

The Origin Story of Guatemala Los Volcanoes


This coffee has a pretty wild story. It grows on the slopes of the active Fuego and Acatenango volcanoes at Finca Santa Elisa Pachup. Living next to an active volcano means one thing: ash. The cherries are constantly covered in it, which forces the producers to perform an incredibly meticulous washing process at the Beneficio La Esperanza.

It sounds like an incredibly demanding process, right? But that extra effort is the secret sauce. This meticulous care results in an exceptional cleanliness in the cup—a purity that lets the fruit notes shine without any "noise." It’s resilience and dedication you can actually taste.

What’s in the cup? (Spoiler: It’s not chocolate)


For this lot, we chose the Marsellesa - Sarchimor variety because we wanted something vibrant and modern. When you take the first sip, look for:


  • Honeydew melon sweetness right at the start.

  • Sweet kiwi bright and clean body.

  • Red apple crisp and lingering finish.

Dialing it in: My AEG Recipe


I’ve spent quite a bit of time at my AEG 8000 Series to find the "sweet spot" for these beans. This Guatemala is all about balance—you want to tame the acidity just enough to let the sweetness take the lead.

Think of this as your starting point—a solid base to begin your journey with the Los Volcanoes. From here, I encourage you to tweak, play, and explore. Every palate is different, and that’s the beauty of specialty coffee.


My recommended baseline:


  • Dose: 18g of freshly ground coffee.

  • Grind Size: Start with Setting No. 7 on the integrated AEG 8000 Series grinder.

  • Yield: Aim for 40g in the cup.

  • Time: Between 26 and 28 seconds at 9 bar.

My Tip: Consistency is key, but remember that coffee is a sensitive product. If you’re making several coffees in a row, the grinder blades might warm up, slightly affecting the flow. Also, remember that even a change in weather can play a role. If you see the flow changing, don't worry—just make small adjustments to your tamping pressure to bring the flavor back to that perfect balance. If it’s running too fast, try tamping a bit firmer; if it’s too slow, lighten your touch.
