Brewing Ethiopia Okoluu with AEG Series 8000 | Uni.coffee
I’ve been dialing in the AEG Series 8000 + Ethiopia Okoluu combination to find the right balance. This 87 SCA point Natural process bean from Guji is a fruit powerhouse.
Having been roasted on December 22nd, it has now reached its peak maturity. While many people chase "young" roasts, specialty coffee like this often needs time to open up. The initial gases have finally settled, leaving room for a sophisticated, syrupy sweetness that is perfect for espresso enthusiasts brewing at home.

The Recipe: The Recipe: Brewing this Café de Especialidad AEG Series 8000 Ethiopia Okoluu
To fully capture the strawberry notes, we need a high extraction yield. I strongly recommend using exclusively the double basket to maintain thermal stability and pressure. I always keep my scale under the cup to monitor the flow—at home, consistency is everything.
My calibration for the AEG EC8-1-8BP (as a starting point):
Dose: 18.5g (Double shot)
Yield: 38g of espresso in the cup
Time: 28 - 30 seconds

The Grind: A Starting Point
For the Ethiopia Okoluu, we need a fine, flour-like texture. To give you a reference, I set my grinder to 5

Since the beans are at their peak, they are much more stable and easier to handle compared to an unstable, younger roast. You’ll get a much more predictable extraction.
The Goal: The espresso should start dripping after 5-6 seconds and then evolve into a thin, steady "mouse tail" flow.
The AEG Advantage
The AEG Series 8000 (2200W) handles light-medium roasts beautifully, but you need to help it reach its peak. Always run a "blank shot" (water only) 10 seconds before your extraction to heat the group head. This ensures you unlock that "creamy" mouthfeel we love without any bitterness.

The Result
When you hit these parameters, the result is unmistakable: a vibrant, clean espresso where ripe strawberry hits first, followed by a velvety cream body and a bright, citrusy finish.
